Chicken with dried fruit and cinnamon

-1 chicken in big pieces
-50g toasted almonds and hazelnuts
-1 onion
-100g Parma ham
-100g olives
-2 ripe tomatoes
-Ground cinnamon
-Saffron
-1 spoonful of oregano
-1 leaf of laurel
-1 spoonful of flour
-Olive oil
-Salt
-1 clove of garlic
*-*Lightly fry the pieces of seasoned chicken in a frying pan with hot oil and keep them in a cooking pan.
*v*Boil water, blanch the olives in it and add them to the pieces of chicken in the cooking pan.
*-*Fry the slices of ham in the chicken grease left in the frying pan.
*-*Chop the onions and, separately chop the tomatoes in cubes.
*w*Add the onions to the frying pan, and when it is brown, add the tomato.
*j*When they reduce, pour the sauce in the chicken cooking pan and put it over the fire.
*-*Add the spoonful of flour, stir and cover everything with water.
*-*Add the laurel and oregano and cook until it decreases, for about 25 min.
*k*In a mortar, crush together the clove of garlic with the saffron, cinnamon, almonds and hazelnuts until you obtain a soft paste.
*-*Add some spoonfuls of the chicken sauce to the paste, dissolve and add to the chicken stew 10 min before finishing cooking. Once it is ready, serve.
