Veal with mushrooms
+4 servings
-1,5 Kg. Veal
-4 ripe tomatoes
-800g dry Red pine mushroom
-Salt, peppercorns
-Laurel, thyme
-Flour
-Olive oil
-1 onion
-1 carrot
-1 glass of brandy or red wine
-1 clove of garlic
-12 toasted almonds
*q*Slice the veal. Season and flour.
*-*Fry the floured veal slices and save them in a cooking pan.
*l*Cut the onion and carrot. Lightly fry on a low flame in the same oil together with the laurel and thyme.
*w*When they are brown, add the tomatoes in pieces and continue frying lightly.
*-*When the frying is done, add salt, pepper, brandy or red wine. Boil for 10 min.
*r*Pour the sauce over the meat in the cooking pan. Chop and add the almonds . Cover with water. Cook for 15 min on a low flame.
*-*When it is ready strain the sauce and pour it again over the meat.
*-*Wash the red pine mushrooms and cut them in big pieces. Lightly fry them in a pan, with hot oil and then add them to the cooking pan.
*-*Cook for 60 min and serve.
