Valencian Paella

-1/2 litre of Olive Oil 
-1 chicken (1,5 Kg) cut into pieces
-1/2 Rabbit (3/4 Kg) cut into pieces
-600g green beans (french beans)
-350g big white beans
-4 artichokes
-100g small white beans
-200g crushed tomato to fry
-10 ladleful of rice
-1 pinch of paprika
-Snails (previously washed and boiled, a handful)
-Salt
-Water
-Saffron
*-*Pour the oil into the paella pan and put it on to heat. 
*-*When the oil is hot add the salted meat (chicken and rabbit).
*v*When the meat is brown add the beans and the artichokes which must be cut into pieces. Fry lightly.
*c*Once vegetables are lightly fried add the crushed tomato, fry it and distribute it all over the paella.
*-*Once the tomato is fried, add a pinch of paprika and fill with water up to the handles.
*-*Add the snails that are previously washed and boiled.
*-*Boil the stock for about 30-45 minutes. Once it is under the rivets, add saffron and salt.
*-*Distribute the rice all over the paella pan.
*j*Raise the heat for 5 minutes so that it boils fiercely. Then lower the heat until the stock disappears. Let it settle for 5 minutes and serve.
