This fresh salad uses a mixture of raw vegetables (rich in nutrients) which combine well with the smoky tofu flavour. Cover the salad with your dressing before you put the tofu strips on top.

1 packet smoked tofu (cut into thin strips)
125g mushrooms (raw - sliced finely)
125g fresh pineapple (chopped into small chunks)
half cup beansprouts
half carrot (chopped into thin strips)
4 tbsp tinned sweetcorn
250g broccoli florets (very lightly boiled and drained)
6 tbsp home-made salad dressing: olive oil, vinegar, salt, pepper, lemon juice, pineapple juice
