This is a good staple dish for dinner. Peel and boil your potatoes first, then boil the lentils. Fry the onion and add the tomatoes, yoghurt and seasoning and then pour over sliced potato and lentil layers. Top with the cheese and finish in the oven.

75g lentils (soaked for approximately 15 minutes, then boiled for 10 minutes)
olive oil
1 onion (chopped finely)
1 large tin tomatoes (400g)
1 carton yoghurt (fluid)
1 tsp paprika
salt & pepper
half tsp mixed herbs
450g potatoes (peeled, boiled and sliced)

30g low fat cheese (finely grated, for topping)
