A good stir-fry pork dish always goes down well. This one is low in fat and can be served with noodles or rice. Make sure you have a good lean fillet of pork. Stir fry the onion and mangetout first and then remove them from your Wok or frying pan. Stir-fry the pork slices in the garlic and ginger. After your pork is cooked stir in the blended liquid (stock etc) and toss the mangetout and onion back into the dish - simply stir and serve!

1 tbsp olive oil
1 onion (sliced thickly)
225g mangetout peas

1 tsp ginger (chopped finely)
1 garlic clove (crushed)
1 pork fillet (approx 450g) (trimmed and sliced thinly)

2 tsp cornflour
1 tbsp soy sauce
1 tbsp rice wine or dry sherry
150ml stock (meat or vegetable)
1 spring onion (thinly sliced) (to garnish)
