This light fried chicken dish is quick and easy to prepare. You could serve this with baked giant mushrooms or a nice dark green vegetable such as broccoli or spinach.

2 chicken breasts (boned, skinned and cut into chunks (of about 3-4 cms)
1 onion (sliced)
6 small cloves of garlic (crushed)
1/2 cup chicken stock
4 tbsp whole-grain French mustard
1 tsp runny honey
1tbsp parsley (chopped) or 1/2 tsp dried parsley
1 pinch dried coriander
salt & pepper
