These kebabs will be a hit with all the family. They are ideal for cooking at home under the grill (for about 10 minutes) or for cooking al-fresco on the BBQ. Marinade the meat well to ensure it soaks up the flavour of the soy sauce, ginger, lemon etc.

Serves 4
Preparation & Cooking time: 2 hrs 30 minutes (marinade = approx 2 hrs)

500g Chicken breasts (bones removed and cut into chunks)
spring onions (shredded into short strips) and mint leaves (shredded)

Marinade:
Salt and pepper
1 tbsp soy sauce
1 tbsp lemon juice
lemon rind of 1/2 a lemon (finely grated)
1 tsp ginger (fresh from jar or finely grated)
1 1/2 tbsp sesame oil
1 tsp tomato puree
1 clove garlic (crushed)
1 shallot (chopped)
2 tsp sesame seeds
