This simple beef lasagne is a good hearty meal for the whole family. Beef can have a higher GI value than other meats, so ensure that the minced beef you use for this recipe is extra lean. Hard cheese is high in GI so this recipe only uses a small proportion in the sauce.

1 large onion (peeled & sliced)
Olive oil (for frying)
250g extra lean minced beef
400g tin tomatoes
2 tsp tomato puree
125ml (1/2 pint) stock
1 tsp basil
1 tsp marjoram
1 clove garlic (peeled & crushed)
2 teaspoons corn flour
salt and pepper
150g uncooked lasagne

Sauce:
25g 'olive' based spread / low fat margarine
25g flour
300ml milk (just over 1/2 pint)
30g grated low fat hard cheese
