This tasty pasta dish can be made for any number of people. It's a simple sauce - just saute the onion, add the remaining ingredients and simmer for 15-20 mins.  Add the sauce to the pasta and toss well before you serve with the sprinkled parsley on top.

500g fresh pasta shells

Olive oil
1 onion (chopped)
1 clove garlic (crushed)
large tin chopped tomatoes (400g)
175g mushrooms (sliced)
1 yellow pepper (cored, seeded and chopped)
3 courgettes (sliced)
1 tsp dried oregano
1 tbsp chopped parsley
1 tsp sugar
1 tsp wine vinegar
1 tbsp chopped parsley to garnish
