This quick stir fry is very low fat and is easy to make. You can cook this in a Wok or in a large frying pan.

1 tbsp olive oil
1 shallot or half an onion (sliced into strips)
2 tbsp Soy sauce
One packet (block) firm tofu (cut into cubes)
half red or green chilli, cut into small pieces (optional)
1 cup beansprouts
1 small carrot (cut into short sticks)
1 small courgette (cut into short sticks)
1 cup button mushrooms (sliced)
Salt & pepper
