This dish is so easy to make and is such a tasty vegetable feast! Lightly drizzle olive oil over your baking tray before laying out your vegetables (add the spring onions later as they cook quicker), and then lightly drizzle olive oil over the vegetables on the tray. Sprinkle with herbs to taste.

2 courgettes (cut into 2 inch thick slices)
1 aubergine (sliced - medium thickness)
2 carrots (cut into 2 inch thick slices)
1 red pepper (cut into large chunks or quarters, depending on size)
1 green pepper (cut into large chunks or quarters, depending on size)
8 cloves of garlic (in tact, with skin on)
8 florets of broccoli
4 florets cauliflower
2 tsp mixed herbs
8 spring onions
