Preparation & cooking time: 30 minutes

This thick noodle soup is great for lunchtime or dinner. It's hot and spicy chilli and onion is balanced by the contrasting cucumber and mint. Cook your noodles and put them in a bowl (a deep one is best) and sprinkle this with your cucumber, chilli, onion and mint leaves. Then fry the chopped onion, add the tomatoes, vegetarian mince and seasoning, pour on top of the noodles and enjoy. You will need a fork and soup spoon to eat this one!

1 packet rice noodles (thick style)
half cucumber (chopped)
1 small red onion (sliced)
2 red chillies (medium size chopped thinly)
1 cup mint leaves

half onion (chopped)
1 large tin of tomatoes (blended)
1 small packet vegetarian mince
1 pinch chilli powder
1 pinch tumeric
1 pinch garam masala
2 tsp soy sauce (to taste
2 tsp white wine vinegar
1 tsp sugar
