This 'old favourite' makes a good family meal. After you have stuffed the fish cover the dish with foil before baking it in the oven.

4 Mackerel (cleaned and boned) (you could also use Trout or Herring)

Stuffing:
2 oranges (peeled & roughly chopped)
half an onion (peeled & finely chopped)
50g fresh breadcrumbs
1 tbsp chopped parsley
1 lemon rind (finely grated)
2 tbsp lemon juice
salt & pepper

Garnish: sliced lemon and sprigs of parsley
